Carrot Oil Recipe
This carrot oil recipe is very easy and relatively quick. This particular process needs only about three days for the infusion to occur, whereas others take several weeks.
Materials
2 or more carrots
Oil of your choice (Coconut or Olive)
Vegetable peeler
Pot
Food processor or hand grater
Jar
Process:
Begin by washing and peeling the carrots. Make sure to cut off the ends with the stem and any discolored parts. Grate the carrots using either a hand grater or a food processor. If using the food processor, pulse the carrots so that they look grated. Put the grated carrots into the pot, then cover them with the oil of your choice. Use just enough oil to fully submerge the carrots. About 18 ounces should be enough. Set the pot's temperature to its lowest setting and let the carrots sit for 24 to 72 hours. The longer they steep, the more the carrots' nutrients will infuse the oil. The oil should reach a temperature of 100 to 105 degrees Fahrenheit (if it helps, use an oil and candy thermometer to check the temperature). As the carrots sit, the oil will start to turn orange. Once the steeping process is complete, turn off the pot heat and pour the mixture through a fine mesh strainer to separate the oil from the carrots. Dispose of the carrots. Keep the oil in a labeled jar. The oil will keep for six to eight months in the fridge.
